I’ve started eating better lately. For me that means being more mindful about what I eat and making smarter choices about how I’m fueling my body.
That has caused me to look at my food differently……carefully……simply noticing it more and enjoying the entire process. From the preparation to the savoring of each bite.
When I cut into the avocado this morning I knew it would be the subject of this week’s photo challenge. I noticed the seed then the dark yellow-green center. The edges are darker green and the outer covering is knotty and black. It’s beautiful!
I ate some of the avocado with my eggs this morning. I sautéed some onions and red and yellow peppers in olive oil then added 2 eggs to the skillet. Once the eggs were cooked I added grated cheddar cheese. I toasted a piece of multi-grain bread and that was my delicious and healthy breakfast.
My daughter and I finished the avocado for lunch. We mashed it, added a little salt and ate it with some whole wheat bread crisps.
